A lovely winter foraged herb is Bittercress (which isn't bitter at all)!

It has a mild, peppery cress flavour, a mild cross between cress and rocket, and is medicinal, as well as being delicious in kai.

It's considered a "weed", but actually belongs to the mustard family. You may see it called Hairy Bittercress, but the leaves are hairless, while the stems are covered in fine, white hairs.

Bittercress is loaded with vitamin C, antioxidants, beta carotene, calcium, magnesium, and sulfur-containing compounds that can help boost our immune system and can also help prevent cancer.

Traditionally, it has been used to treat digestive problems, respiratory ailments, and skin conditions.

Simply pick the young leaves and add to salads, salsa, pestos, on top of quiches and pizzas.
